Nicaragua - SHG EP - 25 lb Box

This is a Strictly High Grown coffee, as opposed to just a High Grown one. EP stands for European Preparation, which is a reference to the amount of defects allowable in the coffee and screen size, 0-8 and 15 +,  if you’re curious. EP  is itself more rigorous than the relaxed American Preparation, which allows screen13 and will accept as many as 23 full defects per 300 grams. If you’re sly you’ll be able to figure out why ours is called an EP 12. These designations have been in use for over a hundred years at this point. Such a rich history lies  in the observance of quality built into the history of coffee and the many differing interpretations and definitions of what makes a quality coffee.
