The El Desarrollo Women’s Association is made up of 221 families across 41 villages on the western slopes of the Eastern Andes in Gigante, Huila. Agriculture is the primary source of income for these communities, and the association provides shared resources, support, and economic stability for all members. Producers follow a disciplined and quality‑focused harvesting protocol. Only the ripest, reddest cherry is selected, ensuring uniform sweetness and optimal fermentation. Cherries undergo 24 hours of in‑cherry fermentation, followed by 24 hours in mucilage before a final wash. Drying is carried out slowly over 25–30 days, with constant rotation to promote even moisture loss and preserve clarity in the cup. The result is a beautifully structured washed Colombian with elegant aromatics and a rich, confectionary sweetness.
