The El Desarrollo Women’s Association brings together 221 families across 41 villages on the western slopes of the Eastern Andes in Gigante, Huila. Agriculture is the backbone of these communities, and the association provides shared resources, technical support, and economic stability—ensuring that each member has the tools to produce high‑quality coffee year after year. Producers follow a disciplined, quality‑driven harvest protocol. Only the ripest, reddest cherries are selected, ensuring uniform sweetness and clean fermentation. The coffee undergoes 24 hours of in‑cherry fermentation, followed by 24 hours in mucilage, before receiving a final wash. Drying takes place slowly over 25–30 days, with constant rotation to maintain even moisture loss and preserve clarity in the cup. The result is a beautifully structured washed Colombian blend with elegant florals, confectionary sweetness, and a polished finish—a testament to the collective skill and dedication of the women who produce it.
