The Canales family is widely regarded as a national treasure in Nicaragua, having shaped the country’s specialty coffee landscape for decades. Their legacy began in 1958, when Don Pío Canales purchased the land that would become Finca Los Delirios. Over the next half‑century, the estate expanded to nearly 400 acres, incorporating Fincas Borbollón and San Antonio, and developing a fully integrated operation that includes a wet mill, a dry mill, and hundreds of raised, shaded drying beds. The family’s commitment to 100% organic production has been unwavering. Don Pío’s grandsons—Norman, Milton, and Daniel—continue to steward the farm with the same philosophy, producing their own fertilizers from cattle manure, coffee pulp, and parchment. Their dedication to ecological stewardship and meticulous processing helped propel Los Delirios to international recognition, including a Cup of Excellence win in 2004 for an entirely organic lot. This washed selection reflects the clarity and sweetness that Los Delirios is known for. In the cup, expect milk‑chocolate and pecan‑pie aromatics, supported by soft purple fruit notes.
