Finca Salaca, owned by Dona Maria Elena and her son Luis Salazar, is well known for producing high quality coffee. They own and operate their own micromill, Beneficio Monte Brisas, where they pay special attention to their processing methods under Dona Maria's supervision. Villa Sarchi are often tricky little beans to work with. In our experience they like to expand alot, so maybe back off your batch size just a little bit. for best results.
