Oswaldo Acevedo, a fourth‑generation coffee producer, has overseen the operations of Hacienda El Roble for the past 25 years. The farm sits within the unique geography of La Mesa de Los Santos in Santander, an area known for its dramatic intraday temperature swings. These shifts slow cherry maturation and help develop the high natural sweetness that defines this lot. Once harvested, the coffee undergoes the traditional Colombian washed process: careful depulping, an overnight fermentation, and controlled drying. Drying is completed in silos and guardiolas until the coffee reaches an ideal moisture content of 11.8%, ensuring stability and longevity. From there, it is passed through an electronic optical sorter before being stored as parchment in GrainPro to preserve quality prior to export. In the cup, this washed selection from El Roble offers fudge, hazelnut, pear, and spiced‑rum aromatics, followed by flavors of stewed fruits and a fruit‑juice‑like body. The structure is sweet, rounded, and expressive—classic Santander character shaped by altitude, climate, and meticulous post‑harvest handling.
