Oswaldo Acevedo is a fourth generation coffee farmer and has been overseeing the administration of Haceinda El Roble for 25 years. The geography of La Mesa De Los Santos gives the farm wide intraday temperature swings, contributing to the high sweetness of this blend. Once harvested this coffee undergoes the traditional depulping, overnight fermentation, and drying process common in Colombia. It is dried in silos and guardiolas until reaching an ideal moisture of 11.8%. From here it is sorted by an electronic eye before being stored as parchment in Grain Pro bags before sacking for shipment.
