This lot of Marchador 15+ Pulped Natural comes from southern Minas Gerais, the home of Coopama – the Machado Agricultural Cooperative. Composed of approximately 3,800 cooperative families, 60% of whom are family farmers, the cooperative sees coffee not just as a crop, but as a true way of life. These families dedicate themselves to environmental preservation, caring for the land, water, and forests that surround them. The excellence of their coffees is the result of sustainable practices and innovations at every stage of production. From selective harvesting to conscious handling and advanced post-harvest techniques, every detail is carefully monitored to guarantee high-quality beans. To strengthen this quality, Coopama encourages its members to adopt best production practices, promoting competitions and awards that recognize the effort and excellence of the producers. In addition, it offers support in defining strategic plans and goals that guarantee a differentiated coffee from the field, adding value to the final product. Harvesting is done almost entirely by hand, with pickers paid fairly to select only the ripest cherries. Once delivered to the patios, the fruit is sorted and directed into either full natural or pulped natural processing, depending on the lot’s intended profile. Quality control is monitored at every stage by the Coop's internal Q Graders, ensuring that the final cup meets the exact profile requirements we look for in Marchador. In the cup, this pulped natural selection offers pecan, cashew, and pastry‑crust aromatics, leading into a profile built around cinnamon warmth and yellow‑fruit sweetness. The structure is smooth and composed, with the hallmark balance and approachability that make southern Minas coffees such reliable staples in a roastery lineup.
