Monsooned Malabar is one of India’s most distinctive coffees, shaped by a traditional post‑harvest method unique to the Malabar Coast. After initial processing, the coffee is stored for several months in open‑air warehouses, where it is intentionally exposed to the region’s seasonal monsoon winds and moisture. Over the course of 12–16 rainstorms and 3–6 months, the beans swell, turn pale gold, and lose much of their natural acidity—transforming into something entirely its own. The result is a cup that is smooth, rounded, and low‑acid, with a gentle sweetness and a comforting, earthy depth. Don’t be fooled by the coffee’s light yellow appearance; it’s a hallmark of the monsooning process and a sign of the slow, atmospheric transformation the beans undergo. Monsooned Malabar is prized by drinkers who prefer a mellow, low‑acidity profile, making it an excellent option for customers who have stepped back from brighter coffees but still want richness, body, and character in the cup.
