This Grade 1 Conilon lot comes from Nicaragua’s Cielo region, where producers are applying more selective harvesting and refined natural processing methods to elevate the cup quality beyond traditional commercial robusta profiles. Composed of a 12+ screen size green, the lot offers improved grading consistency and a more even roast development compared to lower-grade robusta offerings. Dried in the fruit using traditional natural processing methods, the coffee develops a grounded, classic profile centered around dark chocolate, toasted walnut, molasses, and earthy spice. Conilon robusta particularly excels in medium-dark to dark roast applications, where extended caramelization softens bitterness and develops dense cocoa sweetness with low acidity and a syrupy body. In blends, it contributes structure, crema production, caffeine intensity, and the unmistakable “coffee-forward” character many roasters seek in espresso and traditional profiles alike.
