Peaberries occur naturally when only one seed develops inside the coffee cherry instead of the usual two. The resulting bean is smaller and denser, often producing a concentrated cup profile that has made Tanzania one of the world's most sought-after origins for peaberry coffees. This excellent lot hails from the Aviv Estate, in the Songea Rural District of the Ruvama Region of Tanzania. Aviv is globally recognized for its pioneering water conservation efforts, ensuring that its production activities have negligible impact on the water security of the 300,000 people that call the Ruvama River basin home. In addition to water stewardship, approximately 15% of the estate is held as protected conservation habitat to attract pest eating insects and birds. Coupled with shade trees throughout the coffee fields, this practice dramatically reduces reliance on pesticides. The clever use of fertilizer and irrigation in conjunction with each other, called fertigation, allows the estate to ensure the right amount is applied to the right place and the right time. Aviv is also committed to investment in the local communities through various health and sanitation projects such as local clinics and pharmacies, and schools. At the peak of harvest season Aviv employs close to 2000 workers. This lot showcases the classic characteristics roasters expect from a high-quality Tanzania Peaberry. Aromas of tart orange, chocolate, and sweet baked muffins lead into notes of caramel, citrus, and cocoa nibs. A tangy, front-of-the-mouth acidity is balanced by rich sweetness and a full body. .
