Our QC team first met the team from Sabio Farms at a public cupping during Expo 2023 in Portland, where their table immediately stood out—not only for their experimental lots, but for the precision and clarity of their washed coffees. As we connected further, we discovered an unexpected link: their café in Nicaragua is one of our lead buyer’s favorite stops in the country, known for its hospitality and an unforgettable tres leches cake. That meeting sparked a genuine friendship, and since then we’ve been eager to bring Sabio’s coffees into our lineup. This year, the harvest timing, shipping window, and our projected demand aligned, allowing us to feature Flor y Nata, a washed selection that reflects Sabio’s commitment to clean processing, thoughtful agronomy, and transparent producer relationships. In the cup, Flor y Nata offers bittersweet‑cocoa and cookie‑like aromatics, supported by a soft, gentle sweetness. The profile leans toward savory richness and a light, silky body, with subtle undertones that make it an excellent option for roasters seeking a washed Nicaraguan coffee with both comfort and nuance.
