Our QC team first met the Sabio Farms team at a public cupping during Expo 2023 in Portland, where their coffees immediately stood out. While their experimental lots drew plenty of attention, it was the clarity, sweetness, and precision of their washed offerings that made a lasting impression. As we continued talking, we discovered a personal connection: their café in Nicaragua is one of our lead buyer’s favorite stops in the country—known for its warmth, hospitality, and a tres leches cake that has earned near‑mythical status. That meeting sparked a genuine friendship, and we’ve been eager to bring Sabio’s coffees into our lineup ever since. This year, the harvest timing, shipping window, and our projected demand aligned, allowing us to feature Bonanza, a washed selection that reflects Sabio’s disciplined processing and thoughtful farm management. In the cup, Bonanza offers chocolate and red‑fruit aromatics, with a profile that leans into chocolate‑muffin richness, a chewy, satisfying body, and a subtle savory undertone that adds depth without overshadowing the sweetness. It’s a grounded, comforting washed Nicaraguan coffee—approachable, balanced, and shaped by Sabio’s meticulous attention to detail.
