Our QC team first met the Sabio Farms team at a public cupping during Expo 2023 in Portland, where their table immediately stood out. While their experimental offerings drew plenty of attention, it was the precision and cleanliness of their washed coffees that truly impressed us. As we continued talking, we discovered a personal connection: their café in Nicaragua is one of our lead buyer’s favorite stops in the country—known for its warmth, its hospitality, and a tres leches cake that has become something of a legend. That meeting sparked an ongoing friendship, and we’ve been eager to bring Sabio’s coffees into our lineup ever since. This year, the harvest timing, shipping window, and our projected demand finally aligned, allowing us to feature this Anaerobic Washed Villa Sarchi, a lot that showcases Sabio’s technical skill and their willingness to push processing in thoughtful, controlled ways. In the cup, this selection offers berry‑forward aromatics, layered with caramel and bittersweet cocoa. The anaerobic fermentation brings a fruit‑preserve intensity, supported by a tart, lively acidity and a coating, structured body that sets it apart from traditional washed Nicaraguan profiles. It’s expressive without being wild—balanced, modern, and shaped by Sabio’s meticulous approach to fermentation and drying.
